Grain samples from UC Small Grain Variety Testing Trials are analyzed each year by the California Wheat Commission Quality Lab for milling, baking and pasta quality.

2023 Preferred Wheat Varieties

  • Common wheat varieties assessed for bread baking qualities by the California Wheat Commission Quality Lab. Results represent the analysis of data collected from 31 locations across 5 years in California by the UC Small Grain Variety Testing Program. Varieties must have been in trials for a minimum of 2 years to be published in the ranking list. Ranking is subject to change on a yearly basis.
